This delicious Cajun chicken fried rice has just a touch of heat on the chicken that pairs perfectly with the fried rice, eggs, veggies & kielbasa style smoked sausage! It is also super easy and fun to make. The kids even eat it!
Cajun Chicken Fried Rice with Kielbasa Sausage Ingredients
Chicken Marinade
- 2 Tablespoons – Frank’s Red Hot Sauce (Original)
- 2 Tablespoons – Soy Sauce (Low Sodium is Preferred)
- 1 Tablespoon – Minced Garlic
Seasoning for the Rice
- 2 Tablespoons – Paprika
- 1/4 teaspoon – Black Pepper
- 1/2 teaspoon – Ground Thyme
- 1 Tablespoon – Garlic Powder
- 2 teaspoons – Soy Sauce (Low Sodium is Preferred)
Cajun Chicken Fried Rice Blackstone Ingredients
- 2 each – Chicken Breasts (Otto’s is preferred, if available)
- 1 package – Kielbasa or Eckrich Skinless Smoked Sausage (comes in pack of 2)
- 5 each – Eggs
- 1 each – Yellow or Small Red Onion
- 1/2 each – Green Bell Pepper
- 1/2 each – Red Bell Pepper
- 4 Cups – Cooked Rice (we prefer Botan’s Calrose White Rice but jasmine is also awesome)
- 2 Tablespoons – Minced Garlic
How to Make Cajun Chicken Fried Rice With Kielbasa Sausage
Marinate the Cajun Chicken

In a bowl or freezer bag add the minced garlic.

Followed by the Frank’s Red Hot original sauce.

Then add the soy sauce.

Mix everything together well.

Cut up the chicken into either cubes or thin slices.

Add in the chicken.

Mix together well and marinate for at least an hour in the fridge.

While the chicken is marinating, cook the rice preferably in a rice cooker.
Prepare the Cajun Chicken Fried Rice for the Blackstone

Cut up all the veggies and smoked sausage.

Prepare the seasoning.

Put the marinated chicken on the Blackstone and cook the chicken until the internal temperature hits 165 degrees. While the chicken is cooking, place the veggies on the other side of the griddle and saute them.

Once the chicken is cooked, pull them and set them aside. Add the smoked sausage and cook them until they are warm in the middle.

When the veggies are done, pull them and set aside. While the smoked sausage is cooking add the eggs and scramble them up. Once complete, pull them and set aside.

By now the rice should be fully cooked, pulled and cooled on a pan. Add the rice to the Blackstone Griddle.

Add the soy sauce and mix it in good.

Once the soy sauce is mixed in good add the remaining spices and mix them in good.

Once the rice is fried a little add all the other ingredients back in mixing thoroughly.

Remove, plate and enjoy!

Instructions
- Dice up the chicken and place it in the marinade. Marinate the chicken in the fridge for a minimum of an hour.
- Cook the rice in a pressure cooker and set aside on a pan to cool.
- Cut up all the veggies, smoked sausage and set aside the rice seasoning & soy sauce.
- Cook the chicken and set aside.
- Saute the veggies and set aside.
- Cook the smoked sausage and set aside.
- Scramble the eggs and set aside.
- Add the rice to the Blackstone. Mix in the soy sauce.
- Mix in the seasoning and fry the rice.
- Add everything back to the blackstone and mix everything together well.
- Once cooked, pull, plate and enjoy!
