So I recently tried a recipe from Todd Toven he self named the Toddilini. I thought it was good but felt it was missing something. So after some experimenting I’ve reworked his Toddilini and created this awesome Pesto Tortellini with Kielbasa Sausage on the Blackstone Griddle.
This Pesto Tortellini with Kielbasa Sausage is a nice, cheesy dinner with the perfect touch of pesto sauce. The pesto tortellini and sausage is accompanied by delicious veggies such as red bell peppers, onions, grape tomatoes and even spinach.
It is so easy to make that we even cook it on the Blackstone while camping. It is also very versatile in which if you don’t like an ingredient you can simply omit it, or add another favorite.
Pesto Tortellini with Kielbasa Sausage Ingredients
- 1.5 lbs – Tortellini
- 2 Packages – Skinless Kielbasa Sausage
- 2 each – Red Bell Pepper, Diced
- 1/2 each – Red Onion (Or Yellow), diced
- 10 oz – Grape Tomatoes, sliced in halves
- 5 oz – Spinach
- 3 Tablespoons – Pesto Sauce
- 4-6 oz – Italian Cheese
- Extra Virgin Olive Oil (used to prevent sticking and keeping the griddle oiled)
How to Make Pesto Tortellini with Kielbasa Sausage on the Blackstone
For this recipe I’m using a tortellini pasta from Costco, but I’ve had excellent tortellini right out of Walmart’s frozen section. Start out by adding the tortellini to the Blackstone Griddle. Ensure there is enough oil so that they don’t stick.
Once the tortellini is close to being finished, move it to one side of the griddle.
Now that there is room, add the grape tomatoes, red bell peppers, onion and kielbasa sausage. Mix together and cook separate from the tortellini.
Keep the tortellini separate in case it begins to over cook and the rest isn’t quite ready. If this occurs, simply remove the tortellini and set aside until it is ready to be added back in.
Continue cooking the kielbasa sausage, onion, red pepper and grape tomatoes until they are done.
Once the kielbasa sausage is browned, and the other veggies are cooked, quickly add the spinach.
Followed by the pesto.
And mix everything in together. At this point, if the tortellini was removed, it should also be added back in.
After about a minute of mixing, added the Italian cheese, mix it in, remove and serve. At this point, the Pesto Tortellini with Kielbasa Sausage is ready to eat. Enjoy!

Ingredients
- 1.5 lbs – Tortellini
- 2 Packages – Skinless Kielbasa Sausage
- 2 each – Red Bell Pepper, Diced
- 1/2 each – Red Onion (Or Yellow), diced
- 10 oz – Grape Tomatoes, sliced in halves
- 5 oz – Spinach
- 3 Tablespoons – Pesto Sauce
- 4-6 oz – Italian Cheese
Instructions
- Start out by cooking the tortellini on the Blackstone.
- Once cooked 80% of the way, push the tortellini to the side of the Blackstone to continue cooking. Next to the tortellini, add the grape tomatoes, red bell pepper, onion & kielbasa sausage. Mix them together and cook.
- Note, if the tortellini gets done, you can remove it and add it back in later to prevent it from burning or over cooking.
- Once the veggies and sausage are cooked, add the spinach immediately followed by the pesto. At this time everything but the cheese can be mixed together. Once the spinach is slightly wilted, mix in the cheese, remove from the griddle and serve.
