Cheesy Breakfast Burrito on the Blackstone Griddle

These cheesy breakfast burrito’s on the Blackstone Griddle are super easy to make and the kids even love them. One of my favorite things about these breakfast burrito’s is to repurpose that deliciously double smoked ham from the Big Green Egg. It really just adds the extra punch of flavor.

Cheesy Breakfast Burrito on the Blackstone Ingredients

  • Ham Chunks
  • Tortilla Shells
  • 8 – Eggs (Scrambled)
  • 1/4 – Yellow Onion (diced)
  • 1/4 – Green Bell Pepper (diced)
  • Shredded Cheddar (or cheese of choice)
  • Milk (for the egg scramble)
  • Picante Sauce (Optional)

How To Make Cheesy Breakfast Burrito on the Blackstone

Own - Breakfast Burrito On The Blackstone Griddle - Add The Onions, Green Peppers &Amp; Ham

Start out by sauteing the green peppers and onions while heating up the ham. Oil the green peppers and onion as needed.

Once the green peppers and onion are sauteed and the ham is heated, combine all three. Spread the ingredients out on the Blackstone.

Add the scrambled eggs right on top of the green pepper, onions and ham.

Scramble everything on the Blackstone Griddle until the eggs are cooked in which they can then be pulled from the griddle.

Place tortilla’s on a plate with a damp paper towel on top of them. Microwave them for 10 seconds to make the tortilla’s more flexible for rolling. Place a decent amount of cheese on the center of the tortilla.

Spoon on your Ham, green pepper and onion scramble. Add picante sauce if you are looking for a touch of heat.

Fold the sides of the tortilla in.

Roll the tortilla.

Set aside.

Place the breakfast burritos back on the Blackstone Griddle with the seam side facing down.

After a couple minutes, give the breakfast burrito’s a quick flip.

I like to also brown the sides of my breakfast burrito’s.

Remove the burrito’s from the Blackstone and slice in half at a 45 degree angle.

Ingredients

  • Ham Chunks
  • Tortilla Shells
  • 8 - Eggs (Scrambled)
  • 1/4 - Yellow Onion (diced)
  • 1/4 - Green Bell Pepper (diced)
  • Shredded Cheddar (or cheese of choice)
  • Milk (for the egg scramble)
  • Picante Sauce (Optional)

Instructions

  1. Dice the green pepper, onion and ham.
  2. Place the green pepper, onion and ham on the Blackstone. Saute the green pepper and onion while the left over ham is warming up.
  3. Once sauteed, combine all three ingredients and spread them out on the Blackstone. Pour the mixed eggs and milk over the top and scramble the eggs. Remove from heat.
  4. Microwave a couple tortilla shells with a damp paper towel over them for 10 seconds.
  5. Place the cheese, picante sauce and scrambled eggs (with the ham, peppers and onions).
  6. Fold the sides of the tortillas in and then roll.
  7. Place the burritos, seamed side down, back on the Blackstone.
  8. After a couple minutes flip them and then repeat to brown the sides. Remove, cut in half with a 45 degree angle. Plate and serve.
