We love Kirkland’s Pesto, and my wife came home with it out of the blue the other day. While it is delicious on one of our favorite pizza’s, Mozzarella & Feta Cheese Pesto Pizza, we also love using it on this Chicken Bacon Pesto Panini on the Blackstone Griddle.
This Chicken Bacon Pesto Panini recipe makes two sandwiches, so feel free to double it if you are looking to feed more!
Chicken Bacon Pesto Panini Ingredients
- 1/4 Cup – Mayonnaise
- 1 1/2 Tablespoons – Pesto, Kirkland brand is preferred
- 1 Teaspoon – Lemon Juice
- 1/3 Cup – Grated Parmesan Cheese
- Freshly Ground Black Pepper, to taste
- Sour Dough Bread
- 4 Slices, Bacon
- 16 Slices, Chicken Breast Deli Meat
- 4 Slices, Mozzarella Cheese
- Sliced Tomato, Optional (my wife enjoys this, I am not a huge tomato fan)
How to Make the Pesto Sauce for the Panini
The Pesto sauce is super quick and easy to make. Combine the Mayonnaise, Pesto, Lemon Juice, Grated Parmesan Cheese & Ground Black Pepper.
I usually start out by adding the Mayonnaise.
Followed by Pesto.
Followed by Lemon Juice.
Followed by Grated Parmesan Cheese.
Finally, the freshly grounded black pepper.
Mix it all together and you now have the perfect Pesto spread for the Chicken Bacon Pesto Panini’s.
Once the bacon is cooked, you can spread the Pesto sauce on all four pieces of sour dough bread.
How to Make the Chicken Bacon Pesto Panini on the Blackstone
Start out by cooking the bacon. Once cooked, place on a paper towel to help absorb some of the grease.
Next overlap 4 slices of chicken breast deli meat. Do this two times.
Flip the chicken over so they do not burn and then add two pieces of Mozzarella to one of the stacked chicken slices.
Place the other chicken slices on top of the Mozzarella cheese allowing the cheese to melt in between.
Place one of the pieces of sour dough bread on the Blackstone Griddle, pesto sauce side facing up. Take two pieces of bacon and set it on the pesto sauce.
Move the chicken & cheese on top of the bacon.
Place the second piece of sour dough bread on top of the chicken slices creating a sandwich.
After about a minute or so, flip the panini. The sour dough bread should be golden brown.
Once the other side of the sour dough bread is golden brown, it is time to remove the Chicken Bacon Pesto Panini and serve it. Enjoy (Repeat this process for the second panini)!

Instructions
- Combine the Mayonnaise, Pesto, Lemon Juice, Grated Parmesan Cheese & Ground Black Pepper in a bowl and mix together well.
- Cook the bacon, place it on a paper towel to help remove some of the grease once complete, set aside.
- Spread the pest sauce mixture, on one side, of the sour dough bread (you should have 4 slices with one side sauced).
- Overlap 4 chicken slices on the black stone griddle. Repeat this step creating a second row of chicken. Flip the chicken. Add two pieces of mozzarella cheese on one set of the chicken slices. Place the other set of chicken slices on top of the cheese creating a "cheese sandwich".
- Place one slice of sour dough bread, with the pesto sauce up, on the Blackstone griddle. Lay two pieces of bacon on the pesto sauce followed by the chicken and cheese. Add tomato slices, optional. Place a second piece of sour dough bread on the chicken, with the pesto sauce facing down, creating a panini.
- Once the sour dough is golden brown it is time to flip the panini. Repeat this on the otherside. Once both sides are a nice golden brown, remove the Chicken Bacon Pesto Panini from the Blackstone and serve. Enjoy!
Notes
As I mentioned, I'm not a huge fan of tomatoes, but my wife loves tomato slices on this sandwich as well. If you enjoy tomatoes, she highly recommends added them!
