How to make Mozzarella & Feta Cheese Pesto Pizza
The dough will take some time to rise, so you will want to start with prepping it. The best store-bought dough that I can find to date is this Delallo Italian pizza dough kit.
Once the dough has risen it is time to roll it out. The pizza kit makes four pizzas, so cut a 1/4 out a quarter of the dough. Put flour on a baking mat and roll it out to the thickness of your liking (we like it as thin as we can get it).
While corn meal works, I find it much easier to just put the pizza dough on parchment paper. It makes it so much easier to transfer the pizza.
Next up is the Pesto. This is what the container looks like at the store if you are on the hunt.
Spread a thin layer of Pesto sauce on the pizza dough.
Follow the Pesto sauce up with a generous layer of Mozzarella.
Followed by grape tomatoes.
Then the red onion.
We then cut up and make thin cubes of fresh mozzarella and add it to the pizza.
Finally, the Feta cheese gets sprinkled on.
The Mozzarella & Feta Cheese Pesto Pizza is now ready for the Big Green Egg.
Get the Big Green Egg fired up and dialed into around 550-600 degrees with indirect heat. Once the BGE is up to temperature, throw the pizza on the pizza stone.
After about 3 or 4 minutes, remove the parchment paper and rotate the pizza 180 degrees to ensure it gets a good even cook.
After about another 3 to 4 minutes the pizza should be ready. Check to make sure the bottom of the dough has some good coloring and ensure the cheese is nice and melted.
Remove the pizza and enjoy!
