Smoked Stuffed Green Pepper Soup Ingredients
Ingredients
- 1 lb – Ground Beef
- 1 lb – Ground Sausage, Bob Evan Zesty is Preferred
- 3 ea – Large Green Peppers, Chopped
- 1 ea – Large Sweet Onion, Diced
- 3 cloves – Garlice, Minced
- 1 tbsp – Black Pepper
- 1 teaspoon – Swamp Venom by Dizzy Pig Or Regular Salt
- 1 teaspoon – Ground Cumin
- 1 teaspoon – Hot Sauce Franks Red Hot Original is Preferred
- 1 tablespoon – Granulated Garlic
- 1 ea – Small Can Tomato Paste
- 1 ea – Diced Tomatoes with Jalapenos Or with preferred peppers
- 1 tablespoon – Italian Seasoning
- 2 ea – Cans Beef Broth
- 2 cups – White Rice
How to Make Stuffed Green Pepper Soup?
To start making this smoked stuffed green pepper soup you’ll need ground beef, zesty sausage, onion, garlic & green pepper.
Start out by removing the insides of the green pepper and dicing them. Once complete set aside.
Grab the onion and do the same as the green pepper.
In a cast iron skillet, brown the zesty sausage and meat with the onions and garlic. The cast iron skillet is the preferred pan as not only does it cook evenly but once complete you’ll be able to transfer it from the stove top to the Big Green Egg eliminating dishes!
Once the meat and sausage are browned simply add the peppers and continue to cook until the peppers are tender.
Once peppers are tender add remaining ingredients.
Start out by adding the rice.
Then the diced tomatoes and tomato paste.
Add the Italian seasoning.
Mix all the ingredients together and the green pepper soup is ready to be smoked on the Big Green Egg!
How to Smoke Stuffed Green Peppers Soup on the Big Green Egg?
Fire up the Big Green Egg and get it dialed into right around 325 degrees. The smoked stuffed green pepper soup will need to be cooked over indirect heat to prevent the bottom of the soup from burning.
To cook over indirect heat simply put your plate setter / conv”egg”tor in with the feet facing up. Once complete add the grill grate and you are set to go.
Once the Big Green Egg is dialed in right around 325 degrees just let the smoked stuffed green pepper soup simmer for about 2 hours. The soup will simmer until the rice is done (no longer crunchy). Once that is achieved, the soup is complete and ready to serve.
Another option to help speed up the process is to cook the white rice separate in a rice cooker. After the soup has simmered for about 2 hours then add the rice in, mix it together and it is ready to serve.
