This is an easy and delicious concoction that is smoked on the Big Green Egg and creates an awesome Smoked Tater Tot Taco Casserole.
Smoke Tater Tot Taco Casserole Ingredients
- 2 lbs – Ground Beef
- 1 each – Yellow Onion (or 1/4 cup chopped onion)
- 1 Packet – Taco Seasoning
- 2/3 Cup – Water
- 1 Can – Southwest Corn with Poblano & Red Peppers (Drained)
- 1 Can – Fiesta Nacho Cheese Soup
- 1 Package – Tater Tots
How to Make Smoked Tater Tot Taco Casserole on the BGE
Start out by firing up the Big Green Egg. This is an indirect cook in which the plate setter / conv”egg”tor is inserted with the feet facing upward.
Get the BGE dialed into right around 350 degrees.
In a skillet, throw in the ground beef and onion.
Cook until the ground beef is done.
Once done, be sure to drain all the excess grease from the skillet.
Add water to the ground beef and onion.
Add the packet of taco seasoning.
Mix together well and simmer.
Once the taco meat is done transfer it to a 9 x 11 inch pan. Add the corn (after it is drained).
Add the fiesta nacho cheese soup.
Mix everything together well and create an even layer in the bottom of the 9×11 inch pan.
Place an even layer of tater tots on top of the ground beef, corn & nacho cheese mixture.
Confirm the BGE is rolling right around 350 degrees.
Place the tater tot taco casserole on the BGE.
Let the smoked tater tot taco casserole cook on the Big Green Egg for 35-45 minutes, until the tater tots are done. Pull, serve and enjoy!

Ingredients
- 2 lbs - Ground Beef
- 1 each - Yellow Onion (or 1/4 cup chopped onion)
- 1 Packet - Taco Seasoning
- 2/3 Cup - Water
- 1 Can - Southwest Corn with Poblano & Red Peppers (Drained)
- 1 Can - Fiesta Nacho Cheese Soup
- 1 Package - Tater Tots
Instructions
- Put the ground beef in a skillet along with sliced / diced yellow onion. Brown the ground beef then drain the grease.
- Mix in the water and taco seasoning pack. Simmer uncovered for about 5 minutes.
- Transfer the taco seasoned ground beef into a 9x11" pan.
- Add the corn & fiesta nacho cheese soup then mix together well. Create an even layer on the bottom of the 9x11" pan.
- Place tater tots on top creating an even layer.
- Place on the Big Green Egg and smoke at 350 degrees for 35-45 minutes, until the tater tots are done.
- Remove, plate and enjoy the smoked tater tot taco casserole.
Notes
Regular canned corn can be substituted.
Diced Green and Red Peppers can also be added for more flavor.
