These deliciously twice baked potatoes on the BGE or Kamado Joe will surely have your family coming back for seconds! They are loaded with cheese, bacon, sour cream all with a touch of minced garlic and paprika.
Smoked Twice Baked Potato Ingredients
- 1/2 Cup Milk
- Ground Pepper
- 6 strips of Bacon
- 1/2 Cup – Sour Cream
- 4 Tablespoons Butter
- 6 Potatoes (scrubbed)
- Extra Virgin Olive Oil
- 1/2 teaspoon – Paprika
- Green Onions (Optional)
- 1 Tablespoon – Minced Garlic
- 1 Cup – Cheddar & Monterey Jack Cheese or Colby Jack
How to Setup the Big Green Egg for Twice Bake Potatoes
These delicious Twice Bake Potatoes are an indirect cook on the Big Green Egg or Kamado Joe. The BGE will need to be dialed into about 375-400 degrees in which the plate setter / conv”egg”tor will also be inserted with the feet facing upward.
How to Cook the Twice Baked Potatoes on the BGE or Kamado Joe
Start out by giving the potatoes a good scrub with a potatoes scrubber under water. Once complete dry with a towel and let them set until dry.
Drizzle some Extra Virgin Olive Oil on all the potatoes and rub them until the potatoes are coated all the way around.
At this point the Potatoes are ready to be put on the BGE. Once the BGE is up to temperature, right around 375-400 degrees, the potatoes can be set directly on the grills grate. Let the potatoes cook for about 30 minutes in which you’ll need to flip them. Once flipped, let them cook for another 30 minutes (totaling 1 hour)
After a hour has passed it is time to prepare the twice baked potatoes for the second round of cooking.
Start out by cutting the potatoes the long way or lengthwise and in half.
Once complete you can start coring out the potatoes in which you’ll want to leave a little in to help the potato keep its structure when it is refilled. Place the cores in a separate bowl in preparation for the mixture.
Once the potatoes have been cored it is time to add the butter (melted), minced garlic, Paprika and break up the bacon.
Then continue adding the sour cream, milk and Colby Jack or Cheddar & Monterey Jack Cheese and mash as you would for mashed potatoes.
Now that the mashed potatoes are ready it is time to fill the potatoes back up. Generously fill the cored potatoes back up. At this point, if you are preparing these ahead of time you can put them in the fridge until you are ready for them.
Place the twice baked potatoes in a pan and get them back on the Big Green Egg for 15-20 minutes in which you are just heating them back up.
Once the twice baked potatoes are heated back up they are ready to eat. Enjoy!

- 1/2 teaspoon – Paprika
- Green Onions (Optional)
- 1 Tablespoon – Minced Garlic
- 1 Cup – Cheddar & Monterey Jack Cheese or Colby Jack
Instructions
- Fire the Big Green Egg or Kamado Joe up and get it dialed into about 375-400 degrees. Twice baked potatoes are an indirect cook so ensure the plate setter or conv"egg"tor is in with the feet facing up.
- Clean the potatoes with a potatoe brush and pat dry.
- Drizzle Extra Virgin Olive Oil over the potatoes and rub all sides so the potatoes are covered.
- Place the potatoes on the BGE and cook for an hour (or until inside the potato is soft).
- Remove the potatoes and cut them lengthwise (the long way). Core the potatoes halfs and place the middle of the potatoes in a bowl. Leave a little when doing this to keep some structure to the potatoes.
- In the bowl with the cored potatoes add the milk, ground pepper, broken up bacon, sour cream, butter (melted), paprika, minced garlic and cheese. Mash as you would mashed potatoes.
- Spoon the mashed potatoe mixture back into the cored potatoes.
- Place back on the BGE for 15-20 minutes until the twice baked potatoes are heated back up.
- Optional, add some more cheese to be melted on the top and the chives at the end if desired. Then pull, plate and enjoy!
Notes
If you are looking to make these in advance, simply put them in the fridge until needed prior to putting them back on the BGE the second time. When needed, just heat them back up and they are ready to be served.
